So the husband and I are trying to shrink our arses and live longer which, as a general rule, means you eat less crap so I have been looking out for food that is yum but also filling.
Whilst going through a recipe book I found a recipe for these babies:
Ladies and gentlemen I give you the low GI Ham, Corn and Zucchini Muffins (aka: Muffins of the Gods). I had a few request for the recipe so I'll put it here. You'll get an awesome recipe and I'll get people looking at my blog. Happiness for everyone I reckon.
You need to get:
1 Cup of SR flour
1 C of Wholemeal SR flour
1 tsp Baking Powder
2 Tbs Caster Sugar (I use raw caster sugar, cause that's what I likes)
1 x 310g Corn Kernels, drained (duh)
1 decent size Zucchini
100g of Lean Ham, chopped (Though bacon would kick arse too)
1/2 C Grated Parmesan
1/4 C Fresh Chives (I used the mushed up "fresh" ones in the tube you get from Woolies*)
2 eggs
2/3 C Low Fat Milk
1/2 C Natural Yoghurt
Then you have to:
1. Preheat you're oven to 200 degrees, which, to be honest, is much easier than 180. At least my oven has a 200 mark. While i getting nice and toasty grease your muffin tins.
2. Sift your dry stuff. Stir in pretty much everything else EXCEPT the eggs, milk and yoghurt, which you're going to whisk together in a separate bowl, thus making more dishes.
3. Add the wet stuff to the dry stuff. Mix well. Put into a fore mentioned muffin tin and bake for 20 minutes or until done.
Nomnomnom.
FYI these babies are 309 calories per serve but I made twelve little ones so less cals for me. Huzzah!
